My Bad...

So I'm terribly sorry for my absence this week. I was not avoiding you, I promise!  The reality is it's just been a crazy week. I've got no other reason, just being busy...

Well that and I don't really have much to tell you. Hubs and I spent the weekend painting and patching walls, there was quite the debacle with the new light fixture that didn't want to stay up...

But other than that it's just life as normal these past few days. I took some pictures of our progress this week, but they're on a real camera, which means I need to have time to upload them onto my computer... this is my new goal.  It's incredible what you feel accomplished about when your kitchen is in your dining room/living room...

I think that's about it... Hopefully I'll have a more interesting update for you tomorrow!

Inspriation... Where are you?

I seem to have no inspiration for today's post... actually, that's not true, and I cannot tell a lie... I have lots of inspiration for today's post... just nothing so interesting I can talk about it for long enough to make it a real post...

SPAGHETTI WITH ROASTED ZUCCHINI

Serves 2
2 medium zucchini, sliced into ½-in. rounds
Olive oil
½ cup chopped yellow onion
2 cloves garlic, minced
Zest of ½ lemon
1½ tsp. butter
¼ cup fresh bread crumbs (I used canned crumbs)
1 tbsp. chopped fresh mint
6 oz. spaghetti
¼ cup pitted Kalamata olives
¼ cup Parmesan cheese

1. Preheat oven to 450. Place zucchini on a sheet pan. Drizzle with 1 tsp. olive oil and sprinkle with salt and pepper to taste. Roast for 10-15 minutes, stirring once. Remove from oven and set aside.

2. In a 12-in. saute pan, heat 1 tbsp. olive oil. Saute onions over medium-low heat for 5 minutes or until translucent. Add garlic and saute 1 minute. Stir in zucchini and lemon zest. Remove pan from heat.

3. Melt butter in small skillet over low heat. Add bread crumbs and saute until lightly browned. Let cool, stir in mint and set aside. (You don't need to do this step if you use canned crumbs)

4. Bring a large pot of salted water to a boil. Add pasta and cook for 9 minutes. Drain, reserving ¼ cup of pasta cooking water. Add pasta to zucchini mixture. Add olives and reserved water. Bring to a simmer. Reduce heat to low and sprinkle in cheese. Toss pasta until cheese melts. Divide between two bowls. Top with bread crumbs. 


We tried this recipe last Friday before Husband's 10 mile run on Saturday.  I ripped it out of the magazine the other day and made note that it seemed like a good "carb filled" meal for the night before a long run.  It did not disappoint, it was really delicious!  There are just a few things I would change:

1) I added a grilled chicken breast in -- cubed and split between the two of us (or in searching for this recipe online I saw someone added shrimp, that would be good too!)
2) I would add Mushrooms next time
3) I would half the mint, it was a little strong.
4) I 86'd the olives... I'm so not a fan.

After Hubby finished his plate he asked me if there was any more, always a good sign to "keep it in the rotation."

PS, I prepared this post yesterday, except I couldn't find the recipe anywhere online... I searched for an hour, then gave up.  However, I gave it one last shot and found it this morning!   So anywhere it says "today" just think Yesterday :-)

So What Wednesdays

It's that time of week again!  (I totally got called out by a co-worker this morning about it too, he was all, "Isn't it So What Wednesday" and I was all "Yep *giggle*" and he was all "Yeah, I read your blog, don't post it on FB unless you want us to read it" and I'm all "That's the point!"

So Co-worker of mine, I'm glad you read... and I called you out right back! BAM!

So What if...

  • Dillon got into the paint the other night... I'm still not sure how that happened, but it ended with me giving him an impromptu bath at 10PM.
  • I haven't posted the picture of Saturday on the post below, see the above "So What" and you'll understand...
  • I've woken up sweating at 4AM for the past two nights... I refuse to put the air down any lower!  We can afford the bill, it's the principle of paying an astronomical bill for such a small place that I can't get over. 
  • I spent two hours of my day today playing Angry Birds and drawing pictures with my Boss' child instead of doing work... on light days it's actually really fun... it's those days I have a million things to do and she comes in that it stresses me out.
  • When I've got some free time at work (when I'm done with all my work and sticking around to make sure the boss doesn't need anything... I don't slack, coworker) I'll go to hotpads.com and look at houses for sale ... We're no where near ready to buy another house, but a girl can dream right?  Did I tell y'all that last week? Well it's still true...and so what if I did...
  • I've been trying to send our inlaws our wedding pictures for a month now, but everytime we buy CD's or a jump drive it's not big enough!  I WILL get this done by the end of this weekend!  
  • Daisy's got more energy than I know what to do with right now, and it's too hot to take her out to let her run it off... This is actually driving me a bit crazy

Happy Tuesday

Hello Bleeps!

How is everyone's week going?  Anything exciting happening? 

Not in our world

It's pretty much just filled with painting...

We did go to SweetWater Brewing Company on Saturday with some friends to celebrate Husband getting a year older!  That was exciting.



We had a great time.  The idea is you pay $8 for a souvenir mug glass and you get 6 tasting tickets that allow you to "taste" 5.5 ounces of all six beers they have on tap.

We had the best time despite the rain and the heat!  It was just nice to spend some time with our friends!  They only had three beers to "taste" on Saturday, but that's alright, they were my favorite anyway :-).  I did however feel a bit older than the average age of the crowd.  It seems this is something that a LOT of college aged adults are trying out, frat-tastic ones at that.  But I just channeled my college days and felt right at home!  We were supposed to take a tour, but it got so hot in the actual brewery, and they guy never really moved from the one stack of hops he was standing on so we left and went back to the tasting room to hang out a bit more before they kicked everyone out at 4:30PM.  I would definitely go back, but I might wait until they're done remodeling this time so the tour is an actual tour... and maybe air conditioned. 

On a sadder prayerful note, please pray for my old high school friend.
